An inimitable recipe
Salame Brianza is produced from pork meat from farms throughout Lombardy, Emilia Romagna and Piedmont. The unique and inimitable “recipe” closely regulates the ingredients and respective quantities. It is a fine-grained and coarse-grained product. The drying and curing are done according to well-established rules in terms of time and method, based upon the diameter of the salami.
Quality and tradition
In 1978 the Salame Brianza Consortium was founded by some producers with the aim of protecting and safeguarding the characteristics and authenticity of Salame Brianza, including its centuries-old tradition.
The Consortium focuses its activity on defending and protecting the production and marketing of Salame Brianza; safeguarding the typicality of the product, performing checks and certifying the authenticity of Salame Brianza, authorising the use of its identification mark.
